Good wine is created through wise handling. This wisdom can come only from the experience of a noble family whose wine making is an integral part of its' culture and a patrimony of its land.
The founder of the family was Borghino di Taddei. A noble Florentine family which has given six Gonfaloniers and fourteen Priors to the ancient and glorious Florentine Republic.
Vincenzo Borghini de Baldovinetti, archibishop of Pisa, Lieutenant of Granduke Cosimo de Medici, was a distinguished historian and man of letters. With his brother Angiolo, he took part in the battle of Lepanto. He receveid the title of Count Palatine from Don John of Austria. A title was then confirmed by king Philip of Spain.
The family Baldovinetti counts amongst its famous members the great painter Alessio, as well as several ambassadors, two of them to the Court of Spain where the title of Grandee of Spain was bestowed on the family.
The present Count Gian Luigi Borghini Baldovinetti adds to his name that of his paternal grandmother, de' Bacci Venuti, a historic family of Arezzo nobility. This family commissioned Piero della Francesca to paint the frescos of " The Legend of the Cross" in the Cappella Grande of San Francesco.
Today Count Gian Luigi Borghini Baldovinetti de' Bacci Venuti carries on the wine making tradition of his family.
The wine of San Fabiano
The farm produces 9000 hectoliters of Chianti, 1700 hectoliters of white wine and 200 hectoliters of Supertuscan. The Chianti which has a ruby red colour with a marked full body, is kept in oak barrels prior to bottling, to refine its taste and to develop its typical bouquet.
Of particular interest is the production of a prestigious red table wine called Armaiolo di San Fabiano, made of Cabernet Sauvignon and Sangiovese vines. The simple but effective conservation process of Armaiolo consists in decanting the wine, repeatedly and letting it age for about one year in oak barrique and resting it once bottled for 6-7 months.
A new and intense bouquet then develops and its taste becomes soft and austere. It is a wine of high quality and it has been recognized as such in many specialized exhibitions/review. The White of San Sabiano is a fresh agreeable wine a pleasantly palatable after taste, excellent companion to Italian antipasti, soups, fish or white meats. To complete the presentation of our products we must mention the San Fabiano Vin Santo, made with choice grapes left to dry on the plat, and fermented in chesnut casks sealed fot two years, as well as the Extra Virgin Olive oil made exclusive by cold pressing.
There is a San Fabiano wine for each moment of your day: the white to enjoy a light aperitif or to accompany fish, the Chianti to enhance the full bodied taste of good food, whether a sumptous dinner or a plate of country sausages. Armaiolo is ideal for all important and prestigious occasions with strangers or with friends.
